White Bordeaux: the grapes, the styles and where to find them

The short answer: white Bordeaux is made mainly from Sauvignon Blanc and Sémillon, often blended, with a little Muscadelle. The same grapes make two very different wines: crisp or rich dry whites, and the great sweet wines of Sauternes and Barsac.

White grapes cover only about 8% of Bordeaux's vineyard (CIVB), which is why many people forget them. That is a mistake: white Bordeaux is some of the best-value white wine in France, and at the top it ages as well as great white Burgundy.

  • Sauvignon Blanc is now the most planted white grape in Bordeaux, ahead of Sémillon (CIVB).
  • Other permitted whites are Colombard, Merlot Blanc and Ugni Blanc, used in small amounts. Since 2021, Alvarinho and Liliorila are among the new varieties allowed in Bordeaux and Bordeaux Supérieur to adapt to climate change.
  • A family secret: DNA work at UC Davis in 1997 showed that Cabernet Sauvignon is the child of Cabernet Franc and Sauvignon Blanc. Sauvignon Blanc's own likely parent is Savagnin.

The dry styles

  • Fresh and fruity: fermented cool in stainless steel, bottled young. Citrus, grass and crisp acidity. This is most Bordeaux Blanc and Entre-Deux-Mers. Drink within two or three years.
  • Barrel-fermented and aged: fermented and aged in oak, often on the lees, sometimes stirred (bâtonnage). Richer and creamier, with toast and hazelnut, and able to age for years. This is the style of Pessac-Léognan and the best of the Graves.

Many producers give the grapes a few hours of skin contact before pressing for more aroma, and many avoid malolactic conversion to keep the acidity fresh.

The sweet style: noble rot

In Sauternes and Barsac, the cool little Ciron river meets the warmer Garonne. In autumn this brings morning mists and sunny afternoons, perfect for Botrytis cinerea in its good form, noble rot. It shrivels the grapes and concentrates sugar, acid and flavour. Pickers pass through the vines several times, taking only the affected grapes. The result: honey, apricot, marmalade and a saffron-like note, with acidity that keeps it fresh. Sémillon leads the blend, with Sauvignon Blanc for freshness.

Bottles worth trying

  • Value: a good Entre-Deux-Mers or Bordeaux Blanc, such as Château Bonnet; for sweet, Loupiac or Cadillac.
  • Mid-range: Château Carbonnieux, Château Olivier, Clos Floridène; the dry whites of Sauternes estates, such as Doisy-Daëne or “G” de Château Guiraud.
  • Fine wine: Domaine de Chevalier, Smith Haut Lafitte and Pape Clément whites; Pavillon Blanc du Château Margaux, made only from Sauvignon Blanc; Y d'Yquem.
  • Collector: Haut-Brion and La Mission Haut-Brion whites; for sweet, Château d'Yquem, Climens, Coutet and Suduiraut.

White Bordeaux with food

  • Fresh Entre-Deux-Mers: oysters, shellfish, goat's cheese, salads.
  • Barrel-aged Pessac-Léognan: sole or turbot in butter sauce, roast chicken, veal, mushroom risotto.
  • Sauternes: foie gras, Roquefort and other blue cheeses, fruit tarts, crème brûlée, and spicy Asian dishes.

Questions people ask

What grapes are in white Bordeaux?

Mainly Sauvignon Blanc and Sémillon, often blended, with a little Muscadelle. Sauvignon Gris, Colombard, Merlot Blanc and Ugni Blanc are also allowed in small amounts.

Is white Bordeaux dry or sweet?

Both. Most is dry (Bordeaux Blanc, Entre-Deux-Mers, Graves, Pessac-Léognan). Sauternes, Barsac and their neighbours make sweet wines from noble-rot grapes.

Is white Bordeaux oaked?

It depends. Everyday Bordeaux Blanc and Entre-Deux-Mers are usually unoaked. The top Pessac-Léognan and Graves whites are fermented and aged in barrel.
